How can you have any pudding if you don't eat your meat? Well, you can't eat your meat if you can't chew it. For those of us that can't afford the $35 Roast at the grocery store, there is an easy way to get great results with cheaper cuts of meat. It's called braising and it's almost fool proof. The thing to remember is there are two main ways to cook meat. High temperature for a short time, or low temperature for a long time. The high temp method won't work on cheaper cuts of meat but low temperature cooking works great. Here's what to do:
1) Pick up a roast or brisket at the grocery store
2) (optional) Roll your roast in flour, place in oiled pan and brown it on all sides. This really isn't critical, especially if you want to avoid the mess.
3) Put your cut of meat in a large enough roasting pan to add liquid to cover 2/3rds of the meat. You can have fun with what kind of liquid but water works almost as well. I prefer wine or whiskey & water, but that's just me.
4) Toss in some peeled garlic, salt & pepper & cover.
5) Cook in a 300 to 325 degree oven for two to three hours, checking every 90 minutes to make sure the liquid hasn't all evaporated.
This meal is great paired with salad and some good bread. It will also wait awhile if you want to have an extra cocktail or two. I've experimented with temps as low as 250 and cooking times as long as 5 hours and it's always turned out great except the time I forgot it was in the oven for 8 hours. The dog got that one.
